Yama no Susume is another wonderful "girls doing things" show. The key to modern moe is they're turning into sports anime, where everyone in the world is obsessed with one single thing and everything that happens and every emotional arc somehow comes back to playing soccer/mountain climbing/mahjong better. So in K-On they mostly sat around and drank tea, but here they actually spend more time playing.

I haven't gotten around to Witch from Mercury but do want to know what's going on with Suletta's hair.

For real tho FF12 doesn't quite come together in the long run but it's among the very best takes on Star Wars you'll ever see. The game really, really gets what makes Star Wars' lived-in, messy universe appealing, and also what makes Vader a scary dude. Well worth playing for all that.

Witch from Mercury I dropped halfway through. As you allude to, it felt like the characters were getting buttered up so that their death and trauma down the line would have more impact down the line. As a means to an end, that's fine, but if the trauma's the point, it feels squicky and voyeuristic to me. And I couldn't shake that vibe - which is especially unfortunate for a show that invites comparisons to Utena.
